Preparing Cooked Pumpkin

Fresh Pumpkin for Pie

Cut Pumpkin in half and take out all seeds.

Wash pumpkin and cut into quarters to fit into steamer.

Once completely steamed remove cooked pumpkin and place into a bowl.

Mix cooked pumpkin together.

Ingredients for Pie Filling

2 cups cooked pumpkin
1/4 cup cold water
2 eggs
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 cup packed brown sugar
12 fluid ounce can evaporated milk
1/2 teaspoon salt
1/2 cup shortening
1-1/3 cups all-purpose flour

Directions

Mix thoroughly all ingredients together in a bowl. Add in cooked pumpkin and mix until the consistency is not clumpy. Pour into pie dough pan. Preheat oven to 450 degrees Fahrenheit. Place pie in the oven and bake for 10-15 minutes at 450 degrees F. Reduce heat to 350 degrees F for 40-50 minutes. Let Pie cool, crust will be golden brown, enough for 6-8 servings. Serve with a dab of whipped topping and enjoy!

Adding cooked pumpkin to other ingredients.

Ingredients for Pie Crust

  • 1 1/2 cups all-purpose flour
  • 1/2 cup vegetable oil
  • 2 teaspoons white sugar
  • 1 teaspoon salt
  • 2 tablespoons milk

Directions

Mix all ingredients into a bowl, until you have a dough ball. Use flour and a rolling pin and roll out pie dough crust for your 9″pie pan.
